Our second collaboration with Vaughan's Lake Wilcox Brewing Co., Stout Spirit is the distilled essence of their powerhouse Irish Stout. Mashed at Lake Wilcox, then fermented at Last Straw, the potential alcohol was so high that it took a full two weeks to ferment.
This spirit was double-distilled, then aged for four months in a charred American oak cask which was re-coopered for us by our friends at DRM.reCoop in St. Catherines, Ontario.
