Our first rum release is particularly special to us because the making of this spirit brought us together. We hope it will do the same for you and your friends when you pull the cork on a bottle.


Cask #1 Blackstrap Rum is the same base spirit as our Blackstrap - packed with dark toffee flavours, fruity aroma, and a smooth, sweet rum finish. This release spent one year in oak, which has rounded out some of the sharper edges. The dark licorice flavours of the Blackstrap still show through, but aren't as dominant as in the unaged version. The oak also added some lovely vanilla notes on the nose, and a nutty, buttery flavour on the finish. 


This spirit came about from Mike's love of premium Caribbean sugar cane rum, and Don's enthusiasm for trying new things. When we bought the first batch of blackstrap molasses from our supplier, we didn't know that it was different from fancy/sweet molasses, and that distillers avoid blackstrap molasses like the plague for good reason. The 60 litres of molasses that we'd set to ferment yielded us only 6 litres of absolute alcohol - when we were expecting more like 25. The leftover wash was sweet, meaning that a lot of the sugars had been left unfermented.


That was when we discovered why there are so few other blackstrap rums in the world. Blackstrap molasses is a nightmare to work with. Despite the nightmare, we still had hundreds of litres of molasses that we couldn't let go to waste. Not to be outsmarted by a bucket of sugar cane extract, we started experimenting, researching, and experimenting some more. Don spent almost all of his "free" time trying to find a way to encourage yeast to eat sugar. The challenge was to find a way to improve the yield of each batch without sacrificing the unique, dark flavours that hooked us on this stuff in the first place. Eventually, Don cracked the code, and in the spring of 2016, we bottled a batch of our white Blackstrap spirit, and put down three different casks of it to age as rum.


Cask #1 of our Blackstrap Rum is truly unique. It is double-distilled, and aged for one year in a toasted European oak cask. This rum is non-chill filtered, and weighs in at 45.3%, which creates plenty of heat. We recommend serving it over a single cube for the uninitiated.

    The Rum Howler

    I love how the blackstrap flavour pushes through the rum, and I am extremely enthusiastic about Cask Two and beyond. I hope that the guys at the Last Straw Distillery continue to blaze their own path in the rum and spirits world.

    Last Straw Distillery is a brand new entrant to the ever growing list of distilleries here in Toronto. Along with Yonghurst and Toronto Distillery Co they are helping to bring craft distilling back to our great city. I’ll do a proper overview of the entire company soon enough but for now I am reviewing one of their first products: Gin 21. As you could probably guess, Gin 21 is the 21st iteration of the blend used to make the Gin. According to owner Don DiMonte, the final recipe was chosen by “the people”, average gin drinkers who were asked what they like. He calls it the first “crowd sourced” gin in Ontario. Cheesy marketing speak aside, lets see if the taste holds up! Appearance: Completely clear as expected. Quick moving tears. Aroma: Obvious smells of juniper joined by lemon peel and pepper. Taste: Light mouth feel with alcohol burn. Very citrussy with tangerine joining the lemon peel. Aftertaste: Long and slow burn. Overall: Very tasty, light and easy drinking. Loses a bit of complexity with the hardcore citrus flavours but I can see why most would enjoy that.


    I really enjoy drinking this. This reviewed sample is only three months into the aging - though the released product will have another month of wood in it.

    Rich toffee and oak, with walnut, roasted hazelnut, icing sugar, buttercream, nutmeg, and clove, with the confectionary quality on the nose growing even bigger with time. On the palate, quite confectionary yet with some good spice backing. Easy to drink and oaky with light smoke, rich toffee, caramel, banana, and some lighter apple notes. The finish is full of caramel, oak, toffee, and dried corn.

    It doesn’t taste immature, even though it is so young – in part because the distillate is quite clean and combined with bracing oak influence. This has come along in just a few months...I think this is a bit too smooth to be called moonshine!
